Blending traditional Chinese yum cha dishes with Sydney’s freshest seafood.
Located on the ground floor of the Sydney Fish Market in Pyrmont, the Sydney Seafood School offers classes for all skill levels. The friendly staff and professionals aim to show students just how simple and enjoyable cooking with seafood can be and provide a fun, stimulating cooking experience.
Like all classes at the Sydney Seafood School, the yum cha class begins with a live demonstration in the auditorium – a decorative space fitted with live LCD screens, a marble demonstration bench and tiered seating so you won’t miss a moment.
The professional chef gives a brief introduction on yum cha and cooking with seafood, before launching into each dish – Har Toe See (prawn toast), Wor Tip (scallop pot-sticker dumplings), San Choy Bow (squid in lettuce cups) and steamed Chinese greens with oyster sauce. Throwing out handy hints and tips along the way, including the quickest way to shell prawns, how to spot the freshest seafood and how to prepare, clean and cook a whole loligo squid, the professional chef guides you through each dish in detail before you slip your apron on and tackle them yourself.
The state of the art, custom-made cooking area is fitted with stainless steel cooking islands, gas cooktops, ovens, refrigeration units and every appliance and ingredient you’ll need to recreate each dish from the demo. You’ll work together with two to four others to prepare and cook everything, while the professional chef and assistants roam the room offering guidance when required.
Once you’ve peeled, chopped, steamed, diced, deep-friend and simmered everything in your recipe book, you move into the adjoining dining room and enjoy your tasty creations with your cooking team, along with a complimentary bottle of carefully selected wine.
The intimate dining room is just as impressive as all other areas, with a stunning mural of Blackwattle Bay, magnificent fishnet chandeliers and top of the range china and glassware.
With your complimentary recipe book and apron in hand, you’ll leave the Sydney Seafood School satisfied, confident and ready to impress everyone you know with your new skills – although trying to recreate what you’ve learnt in your own kitchen may take some practice!
